Loaded Bibb Salad

I am always a huge fan of, what I like to call, a loaded salad. Today I combined some ingredients that I had left over from previous meals. I started with lettuce and added beets, gorgonzola cheese, and walnuts. This salad tastes just as good as it looks! And as always, it’s so easy to throw together!

Salmon, Asparagus and Wild Rice

This meal takes only 30 minutes to make, including prep time! I put the asparagus in the oven for about 20 minutes. The salmon takes just about 10 and the rice is Uncle Ben’s. Everything can be found at your local grocery store! Although it may not be very exciting, this dinner is delicious and easy!

This Monday, my friends and I decided to treat ourselves.  Chocolate covered strawberries are my absolute favorite dessert and they’re so easy to make!  There are definitely some yummy homemade recipes out there, but I usually just buy the chocolate in the fruit section of my local Kroger!  This is an incredibly easy dessert that is irresistible!

This is honestly one of the easiest dinners I make.  I simply marinate my chicken in whatever sauce sounds good before heading to class.  By the time I get home in the afternoon, the sauce has had time to fully flavor the chicken.  All that is left to do is throw it on the skillet.  Once the chicken has cooked through, I sauté the spinach and mushrooms in the same pan, adding a little bit of garlic powder and olive oil.  Meanwhile, my asparagus have been roasting in the oven.  When all is said and done, this meal takes about 30 minutes to prepare!

Whenever in doubt, I always make spaghetti!  Spaghetti is so easy to whip up and you can always jazz up your boring old recipes by adding only a few ingredients.  This time I decided to combine Vodka sauce with marinara.  I added sautéed spinach and baked chicken. I also baked brussel sprouts to enjoy on the side.

This salad is awesome because it has a little bit of everything. Spinach is great to use in salads because it is packed full of nutrients. To make this salad you will only need a few ingredients! Spinach leaves, mandarin oranges, cherry tomatoes, cucumbers, blended italian cheese, avocado and champagne vinaigrette. All of these items are available at Kroger or practically any other grocery store. This salad is perfect for lunch or dinner. Add chicken, shrimp or fish if this will serve as your entire meal! As always, there is plenty of room to be creative. Add, remove or replace anything you would like!

Turkey Sausage and Vegetable Omelet

This protein packed omelet is tasty at any time of the day!  Omelets are one of my favorite things to make because there is a lot of wiggle room.  This time, I added tomato, spinach, goat cheese, onion, and turkey sausage.  I started by mixing three eggs with a little bit of milk.  Then poured the mixture into the frying pan and let it sit for a minute or two while I chopped up my ingredients.  Then I just threw everything in and folded and flipped!  It doesn’t matter if your omelet isn’t beautiful because the taste will make you forget about looks!

This is a great meal when you’re pressed for time. I buy pre-made, frozen turkey burgers from Trader Joe’s. Typically I cook my patty on a George Forman but you can use an oven too. As for the toppings- I like to switch things up. This time I cut up an avocado and tomato and mixed them together in a bowl. Turkey burgers are great and there is always room to be creative!
