Easy Shrimp Tacos

Shrimp tacos are so easy for lunch OR dinner!  I usually buy pre-bagged frozen shrimp from the grocery store.  To thaw: I take the amount I want to use and put it in a strainer.  I then run the shrimp under cool water.  After that, all you have to do it throw it in a pan and add olive oil/coconut oil.  The toppings are all up to you!

The Perfect Summer Dinner

This is one of my favorite summer meals because it is so easy and delicious!  I bought wild-caught salmon and topped it  with some ‘random’ ingredients in the fridge.  Tonight I concocted a lemon, butter and cream sauce (with a hint of horseradish to spice things up).  I then topped it off with some capers.  Next I boiled some zucchini, squash and onion and then threw together a simple salad!
