This salad is awesome because it has a little bit of everything. Spinach is great to use in salads because it is packed full of nutrients. To make this salad you will only need a few ingredients! Spinach leaves, mandarin oranges, cherry tomatoes, cucumbers, blended italian cheese, avocado and champagne vinaigrette. All of these items are available at Kroger or practically any other grocery store. This salad is perfect for lunch or dinner. Add chicken, shrimp or fish if this will serve as your entire meal! As always, there is plenty of room to be creative. Add, remove or replace anything you would like!
This protein packed omelet is tasty at any time of the day! Omelets are one of my favorite things to make because there is a lot of wiggle room. This time, I added tomato, spinach, goat cheese, onion, and turkey sausage. I started by mixing three eggs with a little bit of milk. Then poured the mixture into the frying pan and let it sit for a minute or two while I chopped up my ingredients. Then I just threw everything in and folded and flipped! It doesn’t matter if your omelet isn’t beautiful because the taste will make you forget about looks!
This is a great meal when you’re pressed for time. I buy pre-made, frozen turkey burgers from Trader Joe’s. Typically I cook my patty on a George Forman but you can use an oven too. As for the toppings- I like to switch things up. This time I cut up an avocado and tomato and mixed them together in a bowl. Turkey burgers are great and there is always room to be creative!
